Recipe of the day: Empanadas

Flour tortilla shells: small ones are better but large ones can be used
Fruit pie filling
1 tbs cinnamon
1/2 cup sugar
hot oil for frying

Mix cinnamon and sugar together and set aside. Spoon a pie filling onto tortilla shells, a big spoonful for small ones or a couple of spoonfuls for bigger ones. fold sides of tortilla shells in like a burrito, or roll up (do not over fill or it will run out.) Make sure oil is hot and lay tortillas in the oil with the open flap down. Watch them carefully because they will burn fast. Turn them over when golden brown and cook the other side. Roll them in the sugar mixture or powdered sugar if you prefer.
